Beetroot and Goat Cheese Salad with Beetroot Microgreens
Ingredients:
- 1 cup cooked beetroot, diced
- 1/4 cup goat cheese, crumbled
- 1/4 cup beetroot microgreens
- 1/4 cup chopped walnuts
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:
- Combine beetroot, goat cheese, beetroot microgreens, and walnuts in a bowl.
- Drizzle with balsamic vinegar and olive oil.
- Season with salt and pepper.
- Toss to coat.
