Chicken and Spinach Salad with Broccoli Microgreens
Ingredients:
- 1 cup cooked chicken, shredded
- 1 cup spinach
- 1/4 cup broccoli microgreens
- 1/4 cup chopped cucumber
- 1/4 cup shredded carrots
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Combine chicken, spinach, broccoli microgreens, cucumber, and carrots in a bowl.
- Drizzle with Dijon mustard and olive oil.
- Season with salt and pepper.
- Toss to coat.
